Perfectly Baked Sweet Potato

4 large sweet potatoes (red-skinned)
4 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil (or bacon grease)
1 teaspoon Kosher salt
Freshly cracked black pepper
Directions:
1. Preheat oven to 425°F.
2. Wash, scrub, and dry the sweet potatoes. Place them on a foil-lined baking sheet.
3. Rub the oil and salt all over the potatoes, then prick them all over with a fork.
4. Bake for 40-60 minutes, checking for tenderness after 45 minutes.
5. Split the tops, add butter, and season before serving.
