Recipes:
1 baguette, sliced into ½-inch rounds
2 tbsp olive oil
2 medium beets, roasted and sliced
8 oz burrata cheese, drained and torn into pieces
¼ cup shelled pistachios, chopped
2 tbsp honey
1 tbsp balsamic vinegar
Fresh thyme or parsley for garnish
Salt and black pepper, to taste
Directions:
Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush with olive oil.
Toast the baguette slices in the oven for 8-10 minutes until golden and crisp.
While the crostini are toasting, prepare the honey pistachio drizzle by combining the honey and balsamic vinegar in a small saucepan over low heat. Stir
occasionally for 2-3 minutes until warmed and smooth.
Once the crostini are ready, top each slice with a few slices of roasted beet and torn burrata cheese.
Drizzle the honey balsamic mixture over the crostini, then sprinkle with chopped pistachios.
Garnish with fresh thyme or parsley, and season with salt and black pepper to taste.
Serve immediately and enjoy!
