Ingredients:
For the Sandwich:
1 everything bagel, sliced
1 tablespoon butter
1/2 pear, thinly sliced
1/2 apple, thinly sliced
1/2 cup shredded cheddar cheese
Handful of fresh spinach leaves
For the Caramelized Onions:
1 medium onion, thinly sliced
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
Salt and pepper to taste
Instructions:
Caramelize the Onions:
In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they begin to soften and turn golden, about 10 minutes.
Add the brown sugar and balsamic vinegar. Continue to cook, stirring occasionally, until the onions are deeply caramelized, about 20-25 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
Assemble the Sandwich:
Spread butter on the cut sides of the bagel halves.
In the same skillet used for the onions, place the bottom half of the bagel, buttered side down. Layer with half of the shredded cheddar cheese, pear slices, apple slices, caramelized onions, and spinach leaves. Top with the remaining cheddar cheese and the other half of the bagel, buttered side up.
Grill the Sandwich:
Heat the skillet over medium heat. Place the assembled sandwich in the skillet and cook until the bottom is golden brown and the cheese starts to melt, about 3-4 minutes. Carefully flip the sandwich and cook until the other side is golden brown and the cheese is fully melted.
