Palak Paneer Halloumi Spinach Curry

Instead of the traditional paneer, this recipe uses salty, pan-fried halloumi for added texture and flavor, making it a must-try for curry lovers. Packed with spinach, spices, and creamy halloumi, this North Indian-inspired curry brings a wonderful blend of health benefits and taste! Serve it with naan, roti, or rice for an unforgettable meal.

500g spinach (thawed frozen works)
50g cashews
100ml water
375g halloumi, bite-sized pieces
2 tsp cumin seeds
2 tsp garam masala
1 onion, diced
4 cloves garlic, diced
1-inch ginger, diced
1 tomato, chopped
2 tbsp tomato paste
1 chilli, chopped
½ cup vegetable or chicken stock

Directions:
1. Cook spinach and cashews in water for 5 mins. Drain, puree, set aside.
2. Fry halloumi until golden, set aside.
3. Dry fry cumin and garam masala, add oil, onion, garlic, ginger, tomatoes, paste, and chilli. Cook 5 mins. Add stock, spinach, simmer 5 mins. Add halloumi, serve.
