Recipes:
1 cup orzo pasta
4 oz goat cheese, crumbled
6-8 fresh figs, quartered
1 tbsp olive oil (for sautéing)
For the Lemon Thyme Vinaigrette:
2 tbsp olive oil
1 tbsp lemon juice
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
1 tsp honey
Salt and black pepper to taste
Directions:
Cook the orzo according to package instructions, drain, and set aside.
While the orzo is cooking, prepare the lemon thyme vinaigrette by whisking together olive oil, lemon juice, thyme, honey, salt, and black pepper in a small
bowl.
In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the quartered figs and sauté for 2-3 minutes until slightly caramelized.
In a large bowl, toss the cooked orzo with the lemon thyme vinaigrette.
Gently stir in the crumbled goat cheese and sautéed figs.
Serve warm or at room temperature. Enjoy this fresh and savory dish!
