7 oz chestnut or portobello mushrooms, sliced
1 tsp crushed ginger
2 tsp crushed garlic
4 spring onions, sliced (green and white separated)
1 cup kale
2 portions udon noodles
1 handful cilantro
Sauce:
2 tbsp gochujang paste
2 tbsp honey
1 tbsp mirin
1 tbsp soy sauce
2 tsp toasted sesame oil

Directions:
1. Whisk together sauce ingredients.
2. Marinate mushrooms in half of the sauce.
3. Saute mushrooms, then add ginger, garlic, onion whites, and kale.
4. Add noodles, onion greens, and remaining sauce. Cook until coated.
