Morning Glory Muffins Recipe
Ingredients:
1 1/4 cups all-purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup brown sugar
2 large eggs
1/3 cup vegetable oil
1/3 cup applesauce
1 tsp vanilla extract
1 cup grated carrots
1/2 cup crushed pineapple (drained)
1/3 cup raisins (optional)
1/3 cup chopped walnuts or pecans
Instructions:
Preheat Oven:
Preheat to 375°F (190°C) and line a muffin tin with liners.
Mix Dry Ingredients:
In a large bowl, whisk together flours, baking soda, baking powder, salt, cinnamon, and brown sugar.
Combine Wet Ingredients:
In another bowl, whisk eggs, oil, applesauce, and vanilla until smooth.
Combine & Fold:
Gradually mix the wet ingredients into the dry.
Gently fold in the carrots, pineapple, raisins, and nuts.
Fill Muffin Tins:
Divide batter evenly among muffin cups.
Bake:
Bake for 18–22 minutes or until a toothpick comes out clean.
Cool & Enjoy:
Let cool on a wire rack. Serve with butter or enjoy plain!
