Mini Mediterranean Focaccia Bites

Ingredients

For the Dough:

2 1/4 tsp active dry yeast (1 packet)
3/4 cup warm water
2 cups all-purpose flour
1/4 cup olive oil (plus extra for drizzling)
1 tsp sugar
1 tsp salt
For the Toppings:

Cherry tomatoes, halved
Kalamata olives, sliced
Feta cheese, crumbled
Fresh rosemary sprigs
Garlic cloves, thinly sliced (optional)
Sea salt flakes
Directions

Make the Dough:

In a small bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes until foamy.
In a large bowl, combine flour and salt. Add the yeast mixture and olive oil, then knead into a soft dough (5-7 minutes). Cover and let rise for 1 hour or until doubled in size.
Shape the Dough:

Preheat oven to 400°F (200°C). Grease a muffin tin or mini tart pan with olive oil.
Divide the dough into 12 pieces and roll each into a small ball. Place each ball into the muffin tin and flatten slightly to form a base.
Add Toppings:

Press cherry tomato halves, olive slices, and crumbled feta cheese into the dough. Sprinkle with fresh rosemary, sliced garlic (if using), and sea salt flakes. Drizzle generously with olive oil.
Bake:

Bake for 18-20 minutes, or until golden brown and puffed up.
Serve:

Serve warm as a snack, appetizer, or alongside soups and salads. Perfect for sharing!
