Mini Banana Cream Tarts

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/2 cup unsalted butter, melted

For the Filling:

2 cups milk

1/2 cup sugar

1/4 cup cornstarch

3 egg yolks

1 tsp vanilla extract

2 ripe bananas, sliced

For Topping:

Whipped cream

Banana slices

Chopped nuts (pecans or walnuts)

Instructions:

Prepare the Crust

Preheat oven to 180°C (350°F).

Mix graham cracker crumbs, sugar, and melted butter until combined.

Press the mixture into mini tart pans and bake for 8-10 minutes. Let cool.

Make the Filling

In a saucepan, whisk together milk, sugar, and cornstarch. Cook over medium heat until thickened.

In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks to temper them, then return the mixture to the saucepan.

Cook for another 2 minutes, stirring constantly. Remove from heat and stir in vanilla extract.

Assemble the Tarts

Place a layer of banana slices on the cooled tart crusts.

Pour the custard filling over the bananas. Smooth the tops with a spatula.

Chill

Refrigerate the tarts for at least 2 hours, or until set.

Add Toppings

Top with whipped cream, a banana slice, and chopped nuts.

Serve and Enjoy
