Directions
In a small bowl, whisk together olive oil, lemon juice, lemon zest, honey, Dijon mustard, salt, and black pepper. Set aside.
In a large mixing bowl, combine cooked rice, feta cheese, dried cranberries, toasted almonds, red onion, and parsley.
