Mediterranean Veggie Quiche

Ingredients

1 pre-made pie crust
4 large eggs
1 cup milk (or half-and-half)
1 cup fresh spinach, chopped
½ cup cherry tomatoes, halved
¼ cup Kalamata olives, pitted
¼ cup red onion, thinly sliced
½ cup feta cheese, crumbled
½ cup shredded mozzarella cheese
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
Directions

Prepare the Crust:

Preheat oven to 375°F (190°C). Roll out the pie crust in a quiche or pie pan. Prick the base with a fork and pre-bake for 10 minutes.
Make the Egg Mixture:

In a mixing bowl, whisk eggs, milk, salt, pepper, and oregano.
Assemble the Quiche:

Layer spinach, cherry tomatoes, olives, red onion, feta, and mozzarella in the pre-baked crust. Pour the egg mixture evenly over the top.
Bake to Perfection:

Bake for 35-40 minutes or until the quiche is set and the top is golden. Let it cool for 5 minutes before slicing.
Serve and Enjoy:

Garnish with fresh parsley or basil. Serve warm or at room temperature.
