Mediterranean Vegetable Galette
Ingredients
1 sheet puff pastry, thawed
1 small zucchini, sliced
1 cup cherry tomatoes, halved
1/2 cup olives (green & black mixed)
1/3 cup feta cheese, crumbled
1 tbsp olive oil
1 tsp dried oregano
1 egg, beaten (for egg wash)
Handful of arugula (optional garnish)
Balsamic glaze (for drizzle)
Salt & pepper to taste
Directions
Prep the Veggies:
Preheat oven to 400°F (200°C). In a bowl, toss zucchini, cherry tomatoes, and olives with olive oil, oregano, salt, and pepper.
Assemble the Galette:
Roll out the puff pastry onto a baking sheet lined with parchment paper. Arrange the seasoned veggies in the center, leaving a 2-inch border. Sprinkle feta cheese over the top.
Fold the Edges:
Gently fold the edges of the puff pastry over the filling, overlapping slightly to create a rustic edge. Brush the edges with beaten egg.
Bake:
Bake for 25-30 minutes or until the pastry is golden and crisp.
Garnish & Serve:
Once out of the oven, let it cool slightly. Top with fresh arugula and drizzle with balsamic glaze before serving.
