Mediterranean Rigatoni Salad

Description

1 lb ground turkey
½ cup breadcrumbs
¼ cup grated parmesan cheese
1 egg, beaten
2 cloves garlic, minced
½ tsp salt
¼ tsp black pepper
½ tsp dried oregano
½ tsp dried basil
¼ cup fresh parsley, chopped
2 tbsp milk
1 tbsp olive oil (for cooking)
1 jar (24 oz) marinara sauce
Directions:
In a large bowl, combine ground turkey, breadcrumbs, parmesan cheese, egg, garlic, salt, black pepper, oregano, basil, parsley, and milk. Mix until well
incorporated.
Roll the mixture into 1-inch meatballs and set them aside on a plate.
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
Pour the marinara sauce into the skillet, covering the meatballs. Reduce heat to low and let simmer for 15 minutes until the meatballs are fully cooked.
Serve hot with pasta, on a sandwich, or as an appetizer. Enjoy!
