Mediterranean Pasta Salad
Ingredients
12 oz spaghetti or pasta of choice, cooked and cooled
1 pint cherry tomatoes (red and yellow), halved
1 cup cucumber, sliced
½ cup red onion, thinly sliced
½ cup kalamata and green olives, halved
½ cup crumbled feta cheese
3 tbsp fresh parsley, chopped
3 tbsp fresh basil, chopped
Dressing:
⅓ cup olive oil
3 tbsp red wine vinegar
1 tsp Dijon mustard
1 garlic clove, minced
½ tsp dried oregano
Salt and pepper to taste
Directions
Cook the pasta: Cook spaghetti according to package instructions. Drain, rinse with cold water, and set aside.
Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper.
Combine ingredients: In a large bowl, toss together the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
Toss with dressing: Pour the dressing over the salad and toss to combine.
Garnish and chill: Sprinkle with fresh parsley and basil. Chill for 30 minutes before serving for best flavor.
