Mediterranean Mashed Potatoes with Feta and Olives
Ingredients
2 lbs potatoes (Yukon Gold or Russet), peeled and chopped
4 tbsp olive oil (plus extra for drizzle)
1/4 cup milk or cream
2 cloves garlic, minced
1/2 cup crumbled feta cheese
1/3 cup mixed olives (green and Kalamata)
2 tbsp fresh dill, chopped
2 tbsp fresh parsley, chopped
Salt and black pepper to taste
Directions
Boil the potatoes: Place potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15–20 minutes. Drain and return to the pot.
Mash the potatoes: Add olive oil, milk, garlic, salt, and pepper. Mash until smooth and creamy. Adjust seasoning to taste.
Assemble the dish: Transfer mashed potatoes to a serving bowl. Top with crumbled feta, olives, dill, and parsley.
Finish with a drizzle: Drizzle with extra olive oil and sprinkle with a touch of black pepper. Serve warm!
