Mediterranean Mashed Potatoes
Ingredients
2 lbs Yukon Gold potatoes (peeled and cubed)
1/4 cup olive oil (plus extra for drizzling)
1/4 cup milk (or plant-based milk for dairy-free)
2 garlic cloves (minced)
1/4 cup crumbled feta cheese
1/4 cup mixed olives (kalamata and green)
2 tbsp fresh parsley (chopped)
2 tbsp red onion (thinly sliced)
Zest of 1 lemon
Salt & pepper to taste
Red chili flakes (optional, for heat)
Directions
Cook the Potatoes: Place cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain and return to the pot.
Mash the Potatoes: Add olive oil, milk, garlic, and lemon zest to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
Assemble the Mediterranean Toppings: Transfer the mashed potatoes to a serving bowl. Top with crumbled feta, olives, red onion, and fresh parsley.
Finish & Serve: Drizzle with extra olive oil and sprinkle with red chili flakes if desired. Serve warm as a side dish or enjoy as a vegetarian main!
