Description
4 salmon fillets (about 6 oz each)
2 tbsp olive oil
¼ cup pure maple syrup
2 tbsp Dijon mustard
1 tbsp soy sauce
1 clove garlic, minced
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
½ cup pomegranate seeds
¼ cup pecans, chopped and toasted
2 tbsp fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, garlic, smoked paprika, salt, and black pepper.
Place the salmon fillets on the baking sheet and brush generously with the maple glaze.
Bake for 12-15 minutes or until the salmon flakes easily with a fork.
Remove from the oven and sprinkle with pomegranate seeds, toasted pecans, and fresh parsley.
Serve warm and enjoy!
