Mediterranean Grilled Chicken with Couscous
Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
3 tbsp olive oil
2 tbsp lemon juice
2 garlic cloves, minced
1 tsp dried oregano
1 tsp paprika
Salt and pepper to taste
For the Couscous:
1 cup couscous
1 1/4 cups chicken broth
1 tbsp olive oil
Salt to taste
For the Salad:
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
1/4 cup red onion, thinly sliced
2 tbsp fresh parsley, chopped
2 tbsp crumbled feta cheese
1 tbsp olive oil
1 tbsp lemon juice
Directions
Marinate the chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken breasts and coat evenly. Let marinate for at least 20 minutes.
Cook the couscous: Bring chicken broth to a boil, stir in couscous, olive oil, and a pinch of salt. Cover and let sit for 5 minutes. Fluff with a fork.
Prepare the salad: In a bowl, toss cherry tomatoes, cucumber, red onion, parsley, feta, olive oil, and lemon juice. Set aside.
Grill the chicken: Heat a grill or skillet over medium-high heat. Cook chicken for 5-6 minutes per side, or until fully cooked (165°F internal temp).
Assemble the dish: Serve the grilled chicken over couscous with the fresh salad on the side. Garnish with additional parsley and lemon wedges.
