Mediterranean Cranberry & Herb Chicken

Description

1 lb ground chicken
½ cup ricotta cheese
¼ cup grated Parmesan cheese
¼ cup breadcrumbs (or almond flour for a low-carb option)
1 egg
2 cloves garlic, minced
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
¼ tsp red pepper flakes (optional)
2 tbsp fresh parsley, chopped
1 tbsp olive oil (for brushing)
Directions:
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, salt, black pepper, red pepper flakes, and
parsley. Mix until just combined.
Using a tablespoon or small scoop, form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
Lightly brush the tops of the meatballs with olive oil to help them brown.
Bake for 18-20 minutes, or until the meatballs are golden brown and cooked through (internal temperature should reach 165°F/75°C).
Serve warm with marinara sauce, over pasta, or as an appetizer. Enjoy!
