15 oz chickpeas (drained & rinsed)
1 cucumber (diced)
½ cup red onion (finely diced)
1 pint baby tomatoes (halved)
6 oz kalamata olives (drained)
6 oz feta cheese (crumbled)
1 tbsp parsley
1 tbsp cilantro
1 tbsp minced garlic
Dressing:
2 tbsp red wine vinegar
1 tbsp lemon juice
3 tbsp olive oil
1 tsp Dijon mustard
2 tsp honey
½ tsp dried oregano
½ tsp ground cumin
Salt & pepper to taste
Directions:
1. Whisk together dressing ingredients.
2. Mix all salad ingredients in a large bowl.
3. Pour dressing over salad, stir to combine, and chill for 1 hour.
4. Garnish and serve cold.
