Mediterranean Chicken Meatballs with Lemon Orzo

Description

1 sheet puff pastry, thawed
4 oz goat cheese, softened
¼ cup cream cheese, softened
¼ cup honey or maple syrup
½ cup cranberry sauce
¼ cup pecans, chopped
1 tbsp maple syrup
½ tsp cinnamon
1 egg (for egg wash)
Fresh thyme leaves (for garnish)
Directions:
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll out the puff pastry and cut into 12 equal squares. Place them into a mini muffin tin, pressing gently to form cups.
In a bowl, mix goat cheese, cream cheese, and honey (or maple syrup) until smooth.
Spoon a small amount of the cheese mixture into each pastry cup, followed by a teaspoon of cranberry sauce.
In a separate bowl, toss the pecans with maple syrup and cinnamon, then sprinkle over the tartlets.
Brush the edges of the pastry with a beaten egg.
Bake for 15-18 minutes, or until the pastry is golden and puffed.
Let cool slightly, then garnish with fresh thyme. Serve warm and enjoy!
