Marry Me Halloumi
This dish is inspired by the famous “Marry Me Chicken,” which is said to be so good it makes someone want to propose marriage after tasting it! This vegetarian twist features golden, salty halloumi cooked in a creamy, herby sauce with garlic, cherry tomatoes, and a touch of smoked paprika. It’s a perfect one-pan wonder ready in 20 minutes, great for impressing that special someone or just enjoying a flavorful and cozy meal. Serve it with pasta, rice, or your favorite veggies!
225g halloumi cheese, thick slices
Salt & pepper, to taste
1 onion, finely diced
1 garlic clove, minced
150g cherry tomatoes, halved
240ml vegetable stock
120ml reduced-fat cream
½ tsp dried oregano
½ tsp dried thyme
1 tsp smoked paprika
2 tbsp grated parmesan
Fresh spinach, handful
Directions:
1. Season halloumi & fry until golden. Set aside.
2. Sauté onion & garlic. Add tomatoes, cook until juicy.
3. Add stock, simmer. Stir in cream & herbs.
4. Add parmesan, spinach, and return halloumi. Simmer briefly.
