Inspired by the popular “Marry Me Chicken,” this vegetarian twist combines halloumi cheese with a rich, creamy sauce made from garlic, tomatoes, herbs, and parmesan. The dish’s name hints at its irresistible flavor that might just spark a proposal! Ready in 20 minutes, this one-pan wonder is perfect for a cozy dinner or a special occasion. 225g reduced fat halloumi cheese, sliced
Salt & pepper
1 onion, finely diced
1 clove garlic, minced
150g cherry tomatoes, halved
240ml vegetable stock
120ml reduced fat cream
1/2 tsp dried oregano
1/2 tsp dried thyme
1 tsp smoked paprika
2 tbsp grated parmesan
Handful of fresh spinach
Directions:
1. Season halloumi with salt & pepper. Brown both sides in a pan.
2. Sauté onion & garlic in the same pan.
3. Add tomatoes, cook until juices release.
4. Stir in vegetable stock, simmer & reduce.
5. Mix in cream, herbs, paprika, & parmesan. Let thicken.
6. Add spinach until wilted. Arrange halloumi, cover & simmer for 2 mins.
