Ingredients :

1 tbsp olive oil
5 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
½ tsp oregano
½ tsp red chili flakes
1 tsp salt
¼ tsp black pepper
2 (15 oz) cans chickpeas, drained and rinsed
1 cup vegetable broth
1 tbsp tomato paste
1 cup vegan cream
2 cups baby spinach, sliced
4-5 basil leaves, chopped
Optional: ½ cup grated vegan parmesan cheese
Directions:

In a large pan, heat olive oil over low-medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
Add chopped sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper. Cook for 1 minute to release flavors.
Stir in the chickpeas, vegetable broth, and tomato paste, mixing until combined.
Pour in vegan cream and add sliced spinach, stirring until spinach begins to wilt.
Allow the mixture to simmer gently until thoroughly warmed, about 5 minutes.
Stir in the chopped basil leaves and, if desired, sprinkle vegan parmesan cheese on top.
Serve immediately with crusty bread for scooping and enjoy the creamy, comforting flavors!
