Marry Me Chicken Soup

Ingredients:

1 tsp olive oil
1-1 ½ lbs boneless, skinless chicken breasts or thighs, diced
2 tsp Italian seasoning, divided
Salt and pepper, to taste
½ cup diced carrots
½ cup diced celery
½ cup diced onions
¼ cup diced sun-dried tomatoes
3 garlic cloves, minced
¼ cup flour
2 tbsp tomato paste (optional)
6-8 cups chicken broth
6 oz pasta (small shells recommended)
1 cup heavy whipping cream
½-1 cup grated Parmesan Reggiano cheese
2 ½-3 cups fresh spinach
Directions:

Cook Chicken: Heat olive oil in a soup pot over medium-high heat. Add chicken, 1 tsp Italian seasoning, salt, and pepper. Cook for 4-5 minutes until browned.
Sauté Vegetables: Add carrots, celery, onions, sun-dried tomatoes, and garlic to the pot. Cook for 3-4 minutes until translucent.
Thicken Base: Sprinkle flour gradually, stirring well. If using tomato paste, add and stir to combine.
Add Broth: Slowly whisk in chicken broth, stirring to avoid lumps. Scrape the pan bottom to deglaze.
Cook Pasta: Bring the mixture to a boil. Add pasta, 1 tsp Italian seasoning, salt, and pepper. Simmer covered for 20 minutes or until chicken is tender and pasta is al dente.
Finish Soup: Stir in heavy cream, Parmesan cheese, and spinach. Simmer for 5 minutes until spinach wilts.
Taste and Adjust: Adjust seasoning with salt and spices as needed. Serve hot.
Prep Time: 35 minutes
Kcal: 400 per serving
