Maple Roasted Beets with Whipped Feta & Walnuts

Description

For the Asparagus:
1 lb fresh asparagus, trimmed
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/3 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1 tsp lemon zest
For the Garlic Butter Drizzle:
2 tbsp unsalted butter, melted
1 garlic clove, minced
1 tbsp fresh lemon juice
Directions:
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, toss asparagus with olive oil, salt, black pepper, and garlic powder.
In a separate bowl, mix Parmesan, panko breadcrumbs, and lemon zest.
Coat each asparagus spear in the breadcrumb mixture and place on the prepared baking sheet.
Bake for 12-15 minutes until crispy and golden brown.
While baking, mix melted butter, minced garlic, and lemon juice in a small bowl.
Drizzle garlic butter over the crispy asparagus before serving. Enjoy!
