Ingredients

1/2 cup mango puree (fresh or canned)
1/2 cup buttermilk
For the Cheesecake Layer:
2 (8 oz) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/2 tsp vanilla extract
For the Mango Cream Cheese Frosting:
1 (8 oz) package cream cheese, softened
1/2 cup unsalted butter, softened
3 cups powdered sugar
1/4 cup mango puree
1 tsp vanilla extract
Instructions
Prepare the Cheesecake Layer:
Preheat the oven to 325°F (160°C). Grease and line a 9-inch springform pan.
Beat cream cheese and sugar until smooth. Add eggs and vanilla, mixing until just combined.
Pour into the prepared pan and bake for 30–35 minutes, or until set. Cool completely and freeze for easier assembly.
Prepare the Mango Cake Layers:
Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
Whisk flour, baking powder, baking soda, and salt in a bowl.
In a separate bowl, cream butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla and mango puree.
Gradually add the dry ingredients alternately with buttermilk, beginning and ending with dry ingredients.
Divide the batter between the pans and bake for 25–30 minutes, or until a toothpick comes out clean. Cool completely.
Prepare the Mango Cream Cheese Frosting:
Beat cream cheese and butter until creamy. Gradually add powdered sugar, beating until smooth.
Mix in mango puree and vanilla. Chill until ready to use.
Assemble the Cake:
Place one mango cake layer on a serving plate. Spread a thin layer of frosting on top.
Add the cheesecake layer, followed by another thin layer of frosting.
Top with the second mango cake layer and frost the entire cake with the mango cream cheese frosting.
