Loaded Mashed Potato Egg Rolls
Ingredients
2 cups leftover mashed potatoes
1/2 cup shredded cheddar cheese
1/4 cup cooked bacon, crumbled
2 green onions, chopped
12 egg roll wrappers
Vegetable oil (for frying)
Sour cream (for dipping)
Directions
In a bowl, mix mashed potatoes, cheddar cheese, crumbled bacon, and green onions until well combined.
Lay out an egg roll wrapper on a flat surface. Place about 2 tablespoons of the mashed potato mixture in the center.
Fold the sides of the wrapper over the filling, then roll it up tightly, sealing the edges with a bit of water. Repeat with the remaining wrappers and filling.
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
Fry the egg rolls in batches for 3-4 minutes, or until golden brown and crispy. Remove and drain on a paper towel-lined plate.
Serve hot with sour cream or your favorite dipping sauce.
