Loaded Mashed Potato Casserole
Ingredients
3 lbs potatoes, peeled and cubed
4 tbsp butter
1/2 cup sour cream
1/2 cup milk
1 1/2 cups shredded cheddar cheese (divided)
6 slices crispy cooked bacon, crumbled
2 green onions, chopped
Salt and pepper to taste
Directions
Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth.
Mix in butter, sour cream, milk, and 1 cup of shredded cheese. Season with salt and pepper to taste.
Transfer the mashed potatoes to the casserole dish. Top with remaining cheese and crumbled bacon.
Bake for 20 minutes, or until cheese is melted and bubbly.
Sprinkle with chopped green onions before serving.
