Ingredients

1 lb elbow macaroni
4 tbsp unsalted butter
4 tbsp all-purpose flour
3 cups whole milk, warmed
1 cup heavy cream
1 tsp garlic powder
1 tsp smoked paprika
Salt & pepper to taste
2 cups sharp cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1 cup Gruyère cheese, shredded
For the Crispy Bites:

1 lb bite-sized crispy nuggets (e.g., popcorn chicken, fried cheese curds, or crispy tofu)
Oil for frying (or bake according to package instructions if store-bought)
Optional Garnish:

Fresh chives, chopped
Parmesan cheese, grated
Instructions
Step 1: Cook the Macaroni
Bring a large pot of salted water to a boil. Cook macaroni until al dente. Drain and set aside.
Step 2: Make the Cheese Sauce
Melt butter in a large saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly.
Gradually add the warm milk and cream, whisking to prevent lumps.
Stir in garlic powder, smoked paprika, salt, and pepper. Cook until the mixture thickens (about 3-4 minutes).
Remove from heat and stir in the shredded cheeses until melted and smooth.
Step 3: Prepare the Crispy Bites
If making homemade crispy bites, bread your protein/cheese and fry until golden and crispy. Drain excess oil on paper towels. If using pre-made bites, bake or fry as per package instructions.
Step 4: Combine and Garnish
