Loaded Cheesy Bacon Potato Bake
Ingredients
2 lbs baby potatoes, quartered
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
Salt and black pepper, to taste
1 1/2 cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
1/4 cup sour cream (plus extra for topping)
1/4 cup chopped green onions or chives
1/4 cup diced tomatoes (optional, for garnish)
Directions
Prep the Potatoes: Preheat oven to 400°F (200°C). Toss the quartered potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread evenly in a greased baking dish.
Bake: Roast the potatoes for 35-40 minutes, tossing halfway through, until crispy and golden.
Load it Up: Remove the baking dish from the oven. Sprinkle shredded cheddar cheese and crumbled bacon evenly over the potatoes. Return to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
Garnish: Top with dollops of sour cream, chopped green onions (or chives), and diced tomatoes if desired.
