Loaded Baked Potato Salad
Ingredients
2 lbs baby potatoes, quartered
1 cup sour cream
1/2 cup mayonnaise
1 tsp garlic powder
1 tsp onion powder
Salt and black pepper, to taste
1 cup shredded cheddar cheese
6 slices bacon, cooked and crumbled
1/4 cup green onions, chopped
1 tbsp fresh parsley (optional, for garnish)
Directions
Place the potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 10-12 minutes, or until the potatoes are tender. Drain and let cool slightly.
In a large bowl, whisk together sour cream, mayonnaise, garlic powder, onion powder, salt, and black pepper.
Add the cooled potatoes to the bowl and toss to coat evenly with the dressing.
Fold in shredded cheddar cheese, crumbled bacon, and chopped green onions.
Garnish with more cheddar, bacon, green onions, and parsley if desired.
Chill for 30 minutes before serving or enjoy it immediately!
