Recipes:

12 oz rigatoni pasta, cooked and drained
½ cup crumbled feta cheese
⅓ cup dried cranberries
½ cup cucumber, diced
¼ cup red onion, finely diced
½ cup Kalamata olives, pitted and sliced
¼ cup fresh parsley, chopped
For the Lemon Vinaigrette:
3 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp honey or maple syrup
1 tsp Dijon mustard
¼ tsp garlic powder
Salt and black pepper, to taste
Directions:
In a large bowl, combine the cooked and drained rigatoni pasta with feta cheese, dried cranberries, cucumber, red onion, olives, and parsley.
In a small bowl or jar, whisk together the olive oil, lemon juice, honey, Dijon mustard, garlic powder, salt, and black pepper.
Pour the lemon vinaigrette over the pasta mixture and toss to coat evenly.
Chill in the refrigerator for 30 minutes before serving to allow the flavors to meld.
Serve cold and enjoy!
