12 oz cheese tortellini, cooked and cooled
1 cup cherry tomatoes, halved

½ cup Kalamata olives, sliced
½ cup feta cheese, crumbled

¼ cup roasted red peppers, chopped
¼ cup fresh parsley, chopped
For the Dressing:
¼ cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
½ teaspoon dried oregano
½ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
Directions:
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and black pepper to make the dressing.
In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, olives, feta cheese, red onion, roasted red peppers, and parsley.
