Recipes:

For the Salad
12 oz rigatoni pasta
1/2 cup crumbled feta cheese
1/2 cup dried cranberries
1/4 cup toasted almonds, sliced
1/4 cup red onion, thinly sliced
2 cups baby spinach, chopped
1/4 cup fresh parsley, chopped
Salt and black pepper, to taste
For the Apricot Vinaigrette
1/4 cup apricot preserves
3 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1 clove garlic, minced
Salt and black pepper, to taste
Directions
Cook rigatoni pasta according to package instructions until al dente. Drain, rinse under cold water, and set aside.
In a small bowl, whisk together apricot preserves, olive oil, apple cider vinegar, Dijon mustard, honey, garlic, salt, and black pepper until well combined.
In a large mixing bowl, combine cooked rigatoni, feta cheese, dried cranberries, toasted almonds, red onion, baby spinach, and parsley.
Drizzle the apricot vinaigrette over the salad and toss gently to coat all .
Season with additional salt and black pepper to taste.
Serve immediately or chill for 15 minutes to allow flavors to meld.
