1 store-bought flatbread or pizza crust
1 tbsp olive oil
1 large yellow onion, thinly sliced
1 tbsp butter
1 tsp balsamic vinegar
1 small apple, thinly sliced
1 cup shredded smoked Gouda cheese
¼ cup crumbled goat cheese (optional)
¼ tsp salt
¼ tsp black pepper
1 tsp fresh thyme leaves
Honey, for drizzling (optional)
Directions:
Preheat oven to 400°F (200°C).
In a large skillet, heat olive oil and butter over medium-low heat. Add sliced onions and cook, stirring occasionally, for about 15-20 minutes until golden and
caramelized. Stir in balsamic vinegar and cook for 1 more minute. Remove from heat.
Place the flatbread on a baking sheet. Evenly spread the caramelized onions over the top.
Arrange the sliced apples over the onions, then sprinkle with smoked Gouda and crumbled goat cheese (if using).
Season with salt, black pepper, and fresh thyme.
Bake for 10-12 minutes until the cheese is melted and bubbly.
Drizzle with honey before serving for a touch of sweetness. Slice and enjoy!
