Lemon Icebox Cake Recipe

Ingredients:

2 cups heavy whipping cream

1/4 cup powdered sugar

1 tsp vanilla extract

1 cup lemon curd

1 package (about 200g) graham crackers or digestive biscuits

Zest of 1 lemon

Lemon slices for garnish

Instructions:

1. Prepare the cream: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

2. Layer the cake: In a rectangular dish, spread a thin layer of whipped cream. Add a layer of graham crackers on top. Spread a layer of lemon curd followed by whipped cream. Repeat the layers until the dish is full, ending with whipped cream on top.

3. Add zest and chill: Sprinkle lemon zest over the top layer. Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.

4. Garnish and serve: Decorate with lemon slices before serving.
