Lemon Herb Rice

Ingredients

1 cup long-grain rice (like basmati or jasmine)
2 cups chicken or vegetable broth
1 tbsp olive oil or butter
1 garlic clove (minced)
Zest of 1 lemon
Juice of 1/2 lemon
2 tbsp fresh parsley (chopped)
Salt & pepper to taste
Directions

Sauté the Garlic: In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Cook the Rice: Add the rice to the saucepan and stir to coat in the oil. Pour in the broth, add salt, and bring to a boil. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and liquid is absorbed.
Add Lemon Flavor: Remove from heat and fluff the rice with a fork. Stir in lemon zest, lemon juice, and fresh parsley. Season with salt and pepper to taste.
Serve: Garnish with extra parsley and a lemon wedge. Serve as a side dish or enjoy on its own!
