Lemon-Herb Greek Pasta Salad with Cranberries & Toasted Pine Nuts

Description

8 oz pasta (such as spaghetti or fusilli)
1/2 cup ricotta cheese
1/4 cup pesto sauce
1/4 cup grated Parmesan cheese
1 tbsp olive oil
2 tbsp pine nuts, toasted
1 lemon, zest and juice
Salt and black pepper to taste
Fresh basil, for garnish
Directions:
In a large pot, cook pasta according to package instructions. Drain and set aside, reserving about 1/2 cup of pasta water.
In the same pot, add olive oil and heat over medium. Add the pesto sauce, ricotta cheese, and a bit of the reserved pasta water. Stir until creamy and well
combined.
Add the cooked pasta back into the pot and toss to coat in the creamy pesto mixture.
Stir in the lemon zest, lemon juice, Parmesan cheese, and season with salt and pepper to taste.
Top with toasted pine nuts and fresh basil leaves.
Serve warm and enjoy the fresh, zesty flavors!
