Lemon Garlic Green Beans
Ingredients
1 lb fresh green beans (trimmed)
2 tbsp olive oil
2 garlic cloves (minced)
Zest of 1 lemon
1 tbsp fresh lemon juice
2 tbsp grated Parmesan cheese
Salt and pepper (to taste)
Directions
Blanch the green beans: Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 minutes until tender-crisp. Drain and transfer to an ice bath to stop cooking. Drain again and set aside.
Sauté garlic: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Add green beans: Toss the green beans into the skillet, stirring to coat them in the garlic oil. Cook for 2-3 minutes to heat through.
Finish with lemon and cheese: Remove from heat, stir in lemon zest, lemon juice, and Parmesan cheese. Season with salt and pepper to taste.
Serve: Transfer to a serving bowl and enjoy this fresh and zesty side dish!
