Lemon Chicken Goat Cheese Meatballs with Garlic Orzo

Description

2 cups cooked pasta (penne or rotini)
1 ½ cups cooked chicken breast, diced
1 cup cherry tomatoes, halved
½ cup cucumber, diced
½ cup kalamata olives, sliced
½ cup crumbled feta cheese
¼ cup red onion, thinly sliced
¼ cup fresh parsley, chopped
Dressing:
3 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp lemon juice
1 tsp dried oregano
1 clove garlic, minced
Salt and black pepper to taste
Directions:
In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, olives, feta cheese, red onion, and parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, garlic, salt, and black pepper until well combined.
Pour the dressing over the salad and toss gently to coat all evenly.
Let the salad sit for 10 minutes to allow the flavors to meld.
Serve chilled or at room temperature and enjoy!
