For the Salad
1 cup farro, cooked and cooled
1/2 cup marinated artichoke hearts, chopped
1/3 cup Kalamata olives, sliced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup crumbled feta cheese
1/4 cup toasted pine nuts
For the Herbed Yogurt Dressing
1/2 cup plain Greek yogurt
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
1 teaspoon honey
1 teaspoon Dijon mustard
1 clove garlic, minced
1 tablespoon fresh dill, chopped
Salt and black pepper, to taste
Directions
In a large bowl, combine cooked farro, artichoke hearts, olives, cherry tomatoes, red onion, parsley, feta cheese, and toasted pine nuts. Toss gently.
In a small bowl, whisk together Greek yogurt, lemon juice, olive oil, honey, Dijon mustard, garlic, dill, salt, and black pepper until smooth.
Drizzle the herbed yogurt dressing over the salad and toss to coat evenly.
Serve immediately or chill for 15 minutes to let the flavors meld.
