Lemon Cheesecake

Ingredients:

For the Crust:

2 cups graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

For the Filling:

3 packages (225 g each) cream cheese, softened

1 cup granulated sugar

3 large eggs

1/4 cup sour cream

1/4 cup lemon juice (freshly squeezed)

1 tsp lemon zest

1 tsp vanilla extract

For Garnish:

Lemon slices

Fresh strawberries

Instructions:

1. Prepare the Crust:

Preheat the oven to 180°C (350°F).

Mix graham cracker crumbs, sugar, and melted butter in a bowl.

Press the mixture evenly into the bottom of a springform pan.

Bake for 8-10 minutes, then set aside to cool.

2. Make the Filling:

In a large bowl, beat cream cheese and sugar until smooth.

Add eggs, one at a time, mixing well after each addition.

Mix in sour cream, lemon juice, lemon zest, and vanilla extract until fully combined.

3. Bake the Cheesecake:

Pour the filling over the cooled crust.

Bake in the preheated oven for 50-55 minutes or until the center is slightly jiggly but set around the edges.

Turn off the oven, crack the door open slightly, and let the cheesecake cool inside for 1 hour.

4. Chill:

Refrigerate the cheesecake for at least 4 hours or overnight.

5. Serve:

Garnish with lemon slices and fresh strawberries before serving.
