Description
1 cup ricotta cheese
¼ cup sun-dried tomatoes, finely chopped
2 tbsp olive oil
1 tbsp lemon juice
1 small garlic clove, minced
¼ tsp red pepper flakes (optional)
Salt and black pepper, to taste
¼ cup fresh basil, chopped
2 tbsp grated Parmesan cheese
Toasted bread, crackers, or vegetables for serving
Directions:
In a bowl, mix the ricotta cheese, sun-dried tomatoes, olive oil, lemon juice, garlic, and red pepper flakes until well combined.
Season with salt and black pepper to taste.
Stir in the fresh basil and Parmesan cheese.
Transfer to a serving dish and drizzle with extra olive oil if desired.
Serve with toasted bread, crackers, or fresh vegetables. Enjoy!
