8 oz pasta (spaghetti, fusilli, or penne)
1/2 cup basil pesto (store-bought or homemade)
1 cup cherry tomatoes, halved
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 ball burrata cheese
1/4 teaspoon red pepper flakes (optional)
1/4 cup grated Parmesan cheese
Fresh basil leaves for garnish
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss cherry tomatoes with olive oil, salt, and black pepper. Spread them on the baking sheet and roast for 15-20 minutes, or until soft and slightly
caramelized.
Meanwhile, cook the pasta according to package instructions. Drain and reserve 1/4 cup of pasta water.
In a large bowl, toss the warm pasta with basil pesto, adding reserved pasta water a little at a time to create a smooth sauce.
Gently fold in the roasted tomatoes.
Transfer the pasta to serving plates and tear the burrata over the top.
Sprinkle with red pepper flakes, Parmesan cheese, and fresh basil leaves.
Serve immediately and enjoy!
