Instant Pot Ham and Cabbage Soup

Ingredients

2 cups cooked ham (cubed)
4 cups chicken broth
3 cups green cabbage (chopped)
3 medium carrots (diced)
3 medium potatoes (peeled and diced)
1 small onion (chopped)
3 cloves garlic (minced)
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon black pepper
1 tablespoon olive oil
Salt to taste
Directions

Set the Instant Pot to Sauté mode and heat olive oil.
Add onion and garlic, cooking for 2-3 minutes until softened.
Stir in the cubed ham, cooking for another 2 minutes.
Add potatoes, carrots, cabbage, thyme, parsley, pepper, and chicken broth.
Seal the Instant Pot lid and set to Manual or Pressure Cook on high for 10 minutes.
Quick release the pressure carefully when done.
Taste and adjust seasoning with salt if needed.
Serve hot and garnish with fresh parsley if desired.

Cook Time: 20 minutes
Total Time: 30 minutes
