Indian-Spiced Lentil Soup
This hearty, vegan lentil soup is inspired by a “clean out the kitchen” approach, using ingredients on hand to create something cozy and comforting. It’s a mix of creamy and chunky textures, brought to life with a single powerful spice—garam masala. It brings warmth and complexity, making this soup rich in flavor without overwhelming it. 1 ½ tbsp olive oil
1 large red onion, diced
4 stalks celery, diced
1 large carrot, diced
5 cloves garlic, minced
26 oz fresh tomatoes, chopped
1 cup dried brown lentils, rinsed
1 tbsp garam masala
Salt & pepper to taste
6 cups vegetable broth
2-3 sprigs thyme
1 cup kale, chopped
2 tbsp lime juice
Directions:
1. Sauté onion, celery, carrot, and garlic in olive oil for 8 minutes.
2. Add tomatoes, lentils, spices, and broth. Simmer 30 mins.
3. Blend 2 cups of soup, then return to the pot. Add kale and lime juice.
