For the Salad:
10 oz cheese or ricotta-filled tortellini
1 cup cherry tomatoes, halved
1 cup baby spinach, chopped
½ cup cucumber, diced
¼ cup red onion, thinly sliced
¼ cup Kalamata olives, sliced
¼ cup crumbled feta cheese
For the Lemon Herb Dressing:
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon honey
1 teaspoon Dijon mustard
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon black pepper
Directions:
Cook the tortellini according to package instructions. Drain and rinse with cold water to cool.
In a large bowl, combine the cooked tortellini, cherry tomatoes, spinach, cucumber, red onion, olives, and feta cheese.
In a small bowl, whisk together olive oil, lemon juice, lemon zest, honey, Dijon mustard, oregano, salt, and black pepper.
Pour the dressing over the pasta salad and toss gently to coat.
Chill for at least 15 minutes before serving for best flavor.
Serve cold or at room temperature.
