This Honey Baklava Cheesecake is a decadent dessert that combines the rich, creamy texture of cheesecake with the sweet, nutty crunch of baklava. The layers of flaky phyllo dough, crunchy walnuts, and honey drizzle make for a mouthwatering treat perfect for special occasions or when you’re craving something truly indulgent!

Ingredients:
For the Cheesecake:

1 cup chopped walnuts
1 cup honey (divided)
2 cups cream cheese, softened
1/2 cup sugar
1/4 cup butter, melted
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
8 sheets phyllo dough
3 eggs
1 cup Greek yogurt
Instructions:
Preheat the Oven:

Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
Prepare Walnut Mixture:

In a bowl, mix together the chopped walnuts, ground cinnamon, and half of the honey. Set aside.
Prepare Cream Cheese Mixture:

In another bowl, beat the cream cheese and sugar until smooth.
Add in the eggs one at a time, mixing well after each addition.
Stir in the Greek yogurt and vanilla extract until fully incorporated.
Layer Phyllo Dough:

Brush the springform pan with melted butter.
Layer 4 sheets of phyllo dough in the pan, brushing melted butter between each sheet.
Add First Layer:

Spread half of the cream cheese mixture over the phyllo dough.
Sprinkle half of the walnut mixture on top.
Add Second Phyllo Layer:

Add another 4 sheets of phyllo dough, again brushing each layer with melted butter.
Pour the remaining cream cheese mixture over the phyllo dough and top with the remaining walnut mixture.
Finish with Phyllo Dough:

Finish with the last 4 sheets of phyllo dough, brushing the top with melted butter.
Bake the Cheesecake:

Bake in the preheated oven for 45-50 minutes or until the top is golden brown and the cheesecake is set.
Add Honey Drizzle:

While the cheesecake is baking, heat the remaining honey in a small saucepan until warm.
Cool and Serve:

Once the cheesecake is done, pour the warm honey over the top.
Let the cheesecake cool before slicing and serving.
