Holiday Beet and Burrata Crostini with Honey Pistachio Drizzle

Description

1 package Trader Joe’s Cauliflower Ravioli
3 tablespoons extra virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes (optional)
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Salt and black pepper, to taste
Zest of 1/2 lemon (optional)
Directions
Bring a pot of salted water to a boil and cook Trader Joe’s Cauliflower Ravioli according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium-low heat. Add sliced garlic and red pepper flakes, sautéing until garlic is golden and fragrant, about 2 minutes.
Add the cooked ravioli to the skillet, tossing gently to coat in the garlic oil. Season with salt and black pepper.
Remove from heat and stir in Parmesan cheese and fresh parsley.
Garnish with lemon zest if desired, then serve immediately.
